Chez Maitre Paul is a relaxed and comfortable restaurant found in the popular St German des Prés area of Paris. Created in 1947 by Paul Maitre, the restaurant aims to bring the authentic flavours and wines of the Franche Comté region of France to the tables of Paris. Franche Conté is the area which includes the Jura mountains, just on the Swiss border where a whole host of amazing delicacies in both food and wine originate. Chez Maitre Paul is a large, yet peaceful restaurant with a sober dining room of big mirrors and lots of natural wood setting the scene for a feast of Jura delights. The food is full of strong flavours and appealing to both a classic or modern palate eager to taste something new. The extensive menu includes Montbéliard (smoked sausage served with potato salad), veal sweetbreads with morel mushrooms, pan cooked veal liver with Van de Paille or turbot and salmon in Comté (cheese) sauce. The free range chicken dishes are very popular either served in vin jaune (dry wine from Jura which is a bit like sherry) or baked in cream and cheese. Finish off with a fine chocolate fondant or walnut meringue for a divine end to your meal. The wine list includes some fine offerings from Jura which are well worth trying. The Chez Maitre Paul restaurant offers a taste of regional France in the heart of the capital.

We had the most wonderful meal at this restaurant last time we were in Paris. We are returning in Oct 2010 and this will be at the top of our list of places to dine.
